Currently bakery is sanitizing their <br />utensils/equipment at the deli 3 comp sink. Continue using deli 3 comp sink to sanitize utensils/equipment until dispenser is <br />fixed. Repair quat dispenser for bakery 3 comp sink within 2 weeks. <br />Observed leaking at the meat prep 3 comp sink quat dispenser hose. Repair leak within 2 weeks. <br />The deli display warmer left door gasket was damaged. Repair/replace damaged gasket within 2 weeks. <br />The lights for the deli open cooler behind the front counter were not working and the light shields were damaged. Provide <br />working lights and replace damaged light shields within 2 weeks. <br />Observed dust buildup on ceiling and fan covers in dairy walk-in. Clean and sanitize within 2 weeks and maintain clean. <br />Observed ice accumulation in the following freezers: <br />- frozen food walk-in freezer on ceiling/floor/compressor pipes/fan covers/shelves <br />- seafood walk-in freezer on ceiling/floor/wall <br />- ice cream walk-in freezer on ceiling/floor <br />- deli/bakery walk-in freezer on ceiling/floor/fan covers <br />- market seafood freezer on shelves <br />- frozen vegetables/frozen meal/frozen breakfast/ice cream freezer aisles on shelves/ceiling/vent <br />Clean areas noted above within 2 weeks and maintain clean. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. Provide an accurate and easily visible <br />thermometer within 1 week. <br />The produce walk-in and the deli open cooler behind deli front counter did not have working thermometers. Provide an <br />accurate and easily visible thermometers within 1 week. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines.
