Per store director they are supposed to keep the food items covered to maintain hot hold temp but leave them <br /> open during lunch rush.After covers were placed the meats were at 136-138 F after 40 minutes. Keep potentially hazardous <br /> food items at 135 F or above for hot holding, if time will be used as the public health control instead provide <br /> documentation/time for 4 hour max hold time. Corrected on site,food items on right side of left steam table were discarded. <br /> The cut fruit ice bath tray was 43 F. Provide 41 F or below and keep adequate levels of ice to maintain temperature. Correct <br /> today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:Observed 1 live cockroach on floor in deli department near canned foods shelf.
