Ensure food items <br /> for cold holding are at 41 F or below. This was corrected on site. Items were moved to a deeper container with ice that <br /> covered all sides of containers. <br /> The observed temperature of the walk-in cooler was 49 F. Adjust unit so that it maintains food at 41 F or below. Correct <br /> today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
