<br />OBSERVATIONS: Pipe, draining the prep sink with indirect connection, is lacking air gap. Provide air gap at least 1 inch or
<br />double the pipe diameter in 1 week.
<br />Prep sink has a loose water faucet. Repair/ replace water faucet in 2 weeks.
<br />CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device, as required
<br />by applicable plumbing codes. (114192) All plumbing and plumbing fixtures shall be installed in compliance with local plumbing
<br />ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair. Any hose
<br />used for conveying potable water shall be of approved materials, labeled, properly stored, and used for no other purpose. (114171,

<br />OBSERVATIONS: I observe the vinyl sheet base, underneath the dish washer and prep rinse sink, torn and missing base
<br />sheet under the 2 comp sink. Provide approved coved base tiles ( slim foot cove base/ Schluter) in these areas in 4 weeks.
<br />*Rubber or vinyl top set base is not permitted in these areas as mentioned in the code below*
<br />The floor surfaces in all food preparation or packaging areas, open food storage areas, utensil washing areas, refuse
<br />storage areas, janitorial areas, and all restrooms and employee change areas, shall be smooth and of durable construction
<br />and nonabsorbent material which is easily cleaned. These floor surfaces shall be coved at the juncture at the floor and wall
<br />with a three-eighths (3/8) inch minimum radius coving and shall extend up the wall at least four (4) inches. Rubber or vinyl
<br />top set base is not permitted in these areas [CRFC §114268].
<br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor
<br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily
<br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original
<br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. (114143 (d),

<br />post a sign within the food facility in a public area stating that toilet facilities are not provided (113725.1, 114381 (e)). Proper posting of
<br />nutritional information at facilities with 20 or more chains in California (114094).
