#45 Floors, Walls, Ceilings; Clean and Maintained <br />OBSERVATIONS: Floor and hard to reach corners, underneath all the cooling units at the prep line, underneath the storage <br />shelves in the walk in cooler and freezer, underneath Bakery rolling racks at the bakery station, underneath the 2 D cooler in <br />the back prep area, have black build up and food debris. Detail clean these areas in 1 week. <br />CALCODE DESCRIPTION: The walls /ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. All food items are received prepackaged ( sealed) and precooked to be <br />stored in the walk in cooler (41F) or in the walk in freezer. Oatmeal is kept on the cold hold unit at the sandwiches prep line to <br />be reheated in the microwave at 165F and served to customers. Precooked meat is kept on the cold hold units at the <br />sandwiches prep line to be re heated in the oven and served. As per manager, no raw meat stored or cooked on site. By <br />inspecting the walk in cooler and the cold hold units at the prep line, no source of potential contamination of stored food items. <br />All cold hold units at the back prep area and at the prep line are at 41F or below. Facility has a valid food manager certificate <br />expiring 11/25/2025 and majority of the food handler cards are valid and on site. By checking the walk in cooler where <br />produce boxes are stored, all boxes have valid Best By Dates. <br />RE INSPECTION IS REQUIRED IN 2 WEEKS. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
