<br /> #41 Plumbing Maintained;Approved Back Flow Device
<br /> OBSERVATIONS:Hot water heater installed has a rating of 38,000 BTU. Hot water shall be supplied at a minimum
<br /> temperature of at least 120°F measured from the faucet. The water heater shall have a minimum rating of 70,000 BTU.
<br /> Facility does not have a food prep sink. A food preparation sink shall be provided in permanent food facilities for the
<br /> washing, rinsing, soaking,thawing, or similar preparation of foods. The food prep sink shall have minimum dimensions of
<br /> eighteen (18)inches by eighteen (18)inches and twelve(12)inches deep with an integral drainboard at least eighteen (18)
<br /> inches by eighteen (18)inches. This sink shall drain to waste by means of an indirect connection. The handwashing and
<br /> food preparation sinks shall be separated from the warewashing sink or food preparation/storage areas by a metal splash
<br /> guard, if separation is less than twenty-four(24)inches. Splash guard shall be at least six(6)inches in height from back
<br /> edge to front edge.
<br /> The hand sink at the tortilla maker was observed with cold and warm water lines crossed. Repair sink so that it is in good
<br /> working order.
<br /> CALCODE DESCRIPTION: The potable water supply shall be protected with a backflow or back siphonage protection device,as required
<br /> by applicable plumbing codes. (114192)All plumbing and plumbing fixtures shall be installed in compliance with local plumbing
<br /> ordinances, shall be maintained so as to prevent any contamination,and shall be kept clean,fully operative,and in good repair. Any hose
<br /> used for conveying potable water shall be of approved materials,labeled,properly stored,and used for no other purpose. (114171,

<br /> #43 Toilet Facilites Clean/Supplied/Maintained
<br /> OBSERVATIONS:The restroom door is not self-closing. Provide well fitting, self-closing doors to all toilet rooms.
<br /> CALCODE DESCRIPTION: Toilet facilities shall be maintained clean, sanitary and in good repair. Toilet rooms shall be separated by a
<br /> well-fitting self-closing door. Toilet tissue shall be provided in a permanently installed dispenser at each toilet. The number of toilet
<br /> facilities shall be in accordance with local building and plumbing ordinances. Toilet facilities shall be provided for patrons:in
<br /> establishments with more than 20,000 sq ft. establishments offering on-site liquor consumption. (114250, 114250.1, 114276)
<br /> #45 Floors,Walls, Ceilings; Clean and Maintained
<br /> OBSERVATIONS:Floor sink was observed open behind the steam table service line. Provide a grate for floor sink.
<br /> The flooring in the steam table service line area is not approved. The floor surfaces in all food preparation or packaging
<br /> areas, open food storage areas, utensil washing areas, refuse storage areas, janitorial areas, and all restroom and
<br /> employee change areas, shall be smooth and of durable construction and nonabsorbent material which is easily cleaned.
<br /> These floor surfaces shall be coved at the juncture at the floor and wall with a three-eighths(3/8)inch minimum radius
<br /> coving and shall extend up the wall at least four(4)inches. Rubber or vinyl top set base is not permitted in these areas.
<br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor
<br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily
<br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original
<br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. (114143(d),
