Provide food manager certificate within 30 days and email certificate to <br /> dafonskaia@sjgov.org once received. <br /> Food handler cards for operator was not available during inspection. Email food handler card to dafonskaia@sjgov.org <br /> within 1 week. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. Per operator they were placed approx. 30 minutes prior to <br /> the inspection and are not kept for more than 1 hour. No records/documentation was available.When time is used as the <br /> public health control then records/documentation must be maintained and a max 4 hour hold time can not be exceeded. <br /> Remaining food items after 4 hour hold time must be discarded. Correct today and email evidence of correction to <br /> dafonskaia@sjgov.org by 3/13/2023 or there will be a chargeable re-inspection. <br /> CALCODE DESCRIPTION:When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> #35 Equipment/Utensils Approved and in Good Repair <br /> OBSERVATIONS:The sanitizer dispenser was not providing any sanitizer, per operator sanitizing solution was being mixed <br /> manually. Continue to manually mix sanitizing soltuion until dispenser provides 200 ppm quat minimum. Email evidence of <br /> sanitizer dispenser working properly to dafonskaia@sjgov.org after it is serviced. <br /> Observed three 20 lbs and one 50 Ib unsecured CO2 cylinders. Keep pressurized cylinders secured to a rigid structure at <br /> all times. Correct today. <br /> Observed dust/debris build up inside exhaust hood and on exhaust hood filters. Clean within 1 week and maintain clean. <br /> CALCODE DESCRIPTION:All utensils and equipment shall be fully operative and in good repair.
