Telephone: (209)367-9900 <br /> Program Element: 1600- FOOD PROGRAM Complaint#: C00055752 <br /> Responsible Party Contact: <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT PURCHASED MEAT ON 4/8/23 AND STATES SHORT RIBS HAD SMALL LARVAE IN BETWEEN BONE <br /> AND MEAT THREADS. COMPLAINANT IS CONCERNED FOR POOR HYGIENE, POOR FOOD HANDLING AND <br /> POSSIBLE CROSS CONTAMINATION AND STATES THAT EMPLOYEES DO NOT CHANGE THEIR GLOVES TO <br /> HANDLE DIFFERENT TYPES OF MEAT. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures <br /> OBSERVATIONS:The front short rib pieces in the meat display case were 43 F, the back ones were 41 F and the unit air <br /> temp was 41 F. Maintain potentially hazardous foods at 41 F or below at all times when cold holding. Correct today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Facility is serviced every 2 weeks by Western <br /> Exterminators and last service was 4/4/23.
