Remove cardboard to provide cleanable <br />surface. Correct today. <br />Observed debris on floor in bakery and walk-in freezer. Clean today and maintain clean. <br />Observed hole in front walk-in wall. Seal and provide smooth, cleanable surface within 3 weeks. <br />Observed foam insulation in ceiling of walk-in cooler and taped cardboard on the ceiling of the walk-in freezer. Provide <br />cleanable surface. Correct within 2 weeks. <br />Observed holes in ceiling in both restrooms. Repair ceiling within 3 weeks. <br />Observed damaged/missing coving in bakery near entrance to kitchen. Observed damaged/missing coving in kitchen <br />around walk-in. The interior of the front walk-in did not have any coving. Provide/Replace with approved coving within 1 <br />month. <br />Observed damaged flooring in both restrooms and in bakery. Repair/replace with approved flooring such as commercial <br />sheet linoleum or floor tiles with cove tiles. Provide minimum 3/8 in. cove radius that extends at least 4 in. up the wall. <br />Correct within 2 months. <br />CALCODE DESCRIPTION: The walls / ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair.
