#45 Floors, Walls, Ceilings; Clean and Maintained <br />OBSERVATIONS: Observed missing ceiling vent cover near ice machine. Provide vent cover within 1 week. <br />Observed dust/debris build up on ceiling and walls in kitchen near cooking/prep area and near dishwasher. Observed dust <br />build up on ceiling vent covers near cooking/prep area. Deep clean within 1 week and maintain clean. <br />Observed debris build up on floor under/around equipment in cooking/prep area and in back storage area near upright white <br />freezers. Deep clean within 1 week and maintain clean. <br />CALCODE DESCRIPTION: The walls /ceilings shall have durable, smooth, nonabsorbent, light-colored, and washable surfaces. All floor <br />surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br />cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original <br />unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. (114143 (d), <br />114266, 114268, 114268.1, 114271, 114272) <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM — LOCATION -- TEMP ° F COMMENTS <br />cocktail sauce (cold hold) — 2 D reach-in prep top on ice — 45.000 <br />fried chicken (hot hold) — heat lamp near walk-in — 125.00° F — <br />range 125-143F <br />mashed potatoes (hot hold) — steam table — 136.00° F <br />sauages (hot hold) — steam table 130.00° F — range 130-140 F <br />COMMENTS AND OBSERVATIONS <br /> <br />Complaint Inspection. <br />Person in charge was not aware of complaint. <br />Observed debris build up on walls, floor, ceiling in kitchen and storage area. <br />Observed fried chicken under heat lamp near walk-in that was 125 F, 129 F, 140 F, and 143 F. <br />When over hot holding and time control requirements for PHFs with person in charge. <br />Sanitizer buckets - 100 ppm chlorine. <br />Chlorine test strips available. <br />Discussed report with Kamryn Bourtayre, Person in charge. <br />No signature captured. <br />Chargeable re-inspection on or after 7/10/23. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
