FR61:, : ) FAX NO. :2099315186 g. 05 2003 04:51PlYI P9
remain vacant and will not be open to the public or be currently used for
anythfng.
The manufacturing and wholesale of gourmet chocolate continues to be
the main part of our business and will be located in the new metal
building. .The IOfJF brick building will be remodeled to include a retail
outlet for our products. We also would like to offer coffee drinks and
perhaps a simple offering of ice cream to highlight our chocolate dessert
toppings. There is a negligible amount of additional wastewater
generated by this operation and its amount has been Included in the
estimate of 325 gallons of cleanup water used per day.
The drains in kitchen area of this building will be plumbed into the grease
trap of our septic system.
H. Ya ave noted that we have added add't'onal equipment to our Rrolect.
Our original site approval application gives only a brief outline of some of
our equipment at our facility. It was by no means an exhaustive list.
Attachment A is a utility list that does list every piece of equipment and it's
utility requirement. You will note that it also contains Items listed as
"future" equipment. This equipment is shown on our latest drawings for
design considerations but we do not have any of it. We are not an
automated, high volume facility but we would like to slowly add equipment
that will be more efficient and Increase our quality.
The additional water consumption of proposed future equipment will be
minimal when compared to the current assumptions of water use and the
ultimate design of the system.
The only changes that affect water usage are
I. Proposed water cooled candy tables
J. Washing machine for hand towels
K. Private shower in the President's office.
The water usage of the tables was sent under separate cover to
environmental health and State Water Quality Board. In summary the
worst-case water consumption if both tables were utilized would be,
20% x 2 tables x 2.3 gpm x 3 batches/day x .20 hr/batch x 60 min/hr
= 3 aalldav
A washing machine is currently used at our facility to wash nand towels
and aprons. We do approximately one load of each, each business day.
This will add 2 x 40 gallons per day. I believe this amount was already
factored into our daily cleanup usage number contained In Chesney's
report.
The shower In the President's office is private and may be used perhaps
once per month.
Page 5
