WASTE DISCHARGE REQUIREMENTS ORDER NO. � <br /> GOLDSTONE LAND COMPANY,LLC AND KURT KAUTZ <br /> BEAR CREEK WINERY <br /> SAN JOAQUIN COUNTY <br /> the effluent limitations of this order. <br /> 8. Activities at the winery include receiving and crushing grapes, fermentation, storage, and <br /> distribution in bulk containers. The facility has a distillery,but it has not been used since 1995. <br /> The Discharger does not plan to use the distillery in the future. Historically, distillery waste <br /> (stillage) was discharged to the 12-acre LTU. <br /> 9. Process wastewater is generated by the following operations: crushing/destemming, pressing, <br /> racking, fining, tank cleaning, general washdown, process equipment sterilization, cold <br /> stabilization, and protein stabilization. Stormwater runoff is also directed into the process <br /> wastewater system for application to the LTUs. <br /> 10. During wine storage and distribution, various chemicals are used, primarily as cleaners or <br /> sanitizers. These compounds may include the following: <br /> Chemical Name and Type Form Ouantity Stored <br /> Anhydrous Ammonia Gas 8,800 lb. <br /> Nitrogen liquid; gas 2,100 lb.; 1,000 ft' <br /> Sodium Hydroxide aqueous solution; solid 220 gal; 4,000 lb. <br /> Sodium Hypochlorite aqueous solution 300 gal. <br /> Trisodium Phosphate/Alkaline Cleaners Solid 3,000 Ib. <br /> Sulfuric Acid aqueous solution 440 gal. <br /> Sulfur Dioxide Solid 2,000 Ib. <br /> Potassium Metabisulfite Solid 2,000 lb. <br /> 11. The facility has three ion exchange water softeners. The laboratory ion exchange unit is <br /> regenerated off-site. The distillery ion exchange unit has been used infrequently since 1995, but <br /> may be used in the future. The keg line ion exchange unit has not been used since 2000 and there <br /> are no plans to reactivate it. When used, the distillery and keg line ion exchange units are <br /> regenerated with sodium chloride brines that are discharged to the process wastewater system. <br /> However, future disposal of regeneration brine must be evaluated in the Salinity Reduction Study <br /> required by the Provisions of this Order. <br /> 12. The wine treatment ion exchange unit, which is used to adjust the pH of the wine, is charged with <br /> sulfuric acid. In 2001, this ion exchange unit was regenerated 23 times, generating about 1,100 <br /> gallons of low pH wastewater with each cycle. The acid rinsate is neutralized with caustic soda or <br /> soda ash before discharge to the process wastewater system. The Salinity Reduction Study must <br /> include an evaluation of this waste stream. <br /> EXISTING WASTEWATER SYSTEM <br /> 13. The facility currently does not have a flow meter. Wastewater flow rates have been measured <br /> using pump run times. Because debris often blocked the pumps,much of the metered data is <br /> unreliable. Based on pump nun time estimates, water usage, and typical industry wastewater <br /> generation rates per ton of grapes processed,the Discharger estimates that flows range from <br /> 100,000 gallons per month (3,300 gpd)to 6.3 million gallons per month (210,000 gpd). <br /> V.S.JaaquN Nan IS�SUR\ObrimTPmjcn Pilu\Bw Crtzk\WDR.doc <br />
