Winery wastewater will be screened at floor drains, and settleable solids removed in two 1,500
gallon three-stage gravity clarifiers. Effluent from the clarifiers will be pumped to the vineyard for
irrigation. Screenings at the floor drains will be collected and placed into trash dumpsters for off-
site disposal, settleable material collected in the clarifiers will be pumped and disposed of at a
landfill.
10. Pomace and other grape wastes (skins, seeds, pulp, and stems) from the primary fermentation
process in the winery will be composted on-site and tilled into the vineyard soil. Filter press
materials will be stored on-site for eventual tilling into vineyard soil. Yeasts and solids generated
in the secondary fermentation process will be washed out of the tanks and into the floor drains.
11. The winery is expected to expand its operations in the future. These waste discharge requirements
include a provision for installation of a meter to determine the wastewater disposal rate.
12. Because the Housley Vineyards Winery has not yet been constructed, typical winery wastewater
data is presented. Compound concentrations in winery wastewater are the highest during the crush
season, typically in the following ranges:
Compound nits Concentration Range'
pH pH units 2.5 -9.5
Dissolved Oxygen mg/1 0.5 - 8.5
Biochemical Oxygen Demand (BODS)2 mg/1 500- 12,000
Chemical Oxygen Demand (COD) mg/I 800- 15,000
Grease mg/1 5 -30
Settleable Solids mg/1 25 - 100
Nonfilterable Residue mg/1 40- 800
Volatile Suspended Solids mg/1 150-700
Total Dissolved Solids (TDS) mg/l 80-2,900
Nitrogen mg/1 1 -40
Nitrate(as Nitrate) mg/1 0.5 -4.8
Phosphorous mg/1 1 - 10
Sodium mg/1 35 -200
Alkalinity(CaCO3) mg/1 40-730
Chloride mg/1 3 -250
Sulfate mg/I 10 - 75
Typical chem cal analyses of winery wastewater from Summit Engineering, 'Process Design Wastewater
Management System.
