Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:The beef is 115F (partially cooked/hot hold?)All hot food shall be maintained at 135F or above. <br /> Corrected on site. Per owner it is partially cooked/stays up on shelf for less that 5 minutes and then veggies are added. <br /> The walk-in cooler is 49F (air temperature). Food in this unit is 43F.Adjust/service unit to maintain cold food at 41 F or <br /> below. Correct today. <br /> The breaded chicken pieces are 45-48F. Maintain cold food at 41 F or below.
