WASTE DISCHARGE REQUIRE. TS ORDER NO. 5-01-172 2 <br /> EAST-SIDE WINERY DBA OAK WGE VINEYARDS' <br /> SAN JOAQUIN COUNTY <br /> 6. Stillage (distillery wastewater) is discharged to a sump which drains to the shallow ponds (Pond B <br /> on Attachment B2). Only stillage wastewater is discharged to the shallow ponds. <br /> 7. Wastewater flow is not metered. The Discharger estimates a total flow of 25 million gallons a year, <br /> with approximately 70 percent of the wastewater generated during the crush season (August <br /> through October) and 30 percent of the water generated the rest of the year. Based on the average: <br /> grape crush of 16,000 tons per year, wastewater flows during the crush are estimated to be <br /> approximately 82,500 to 165,000 gallons per day. East-Side Winery is evaluating reducing the <br /> total flow of wastewater, primarily by treating and recycling cooling water. <br /> 8. During wine production, various chemicals are used as either an additive, a fining agent, or as a <br /> cleaner/sanitizer. These compounds may include the following: <br /> Wine Additive Wine Fining Agent Cleaner/Sanitizes <br /> Citric Acid Bentonite Caustic Soda <br /> Fumaric Acid Carbon Sodi-am Hypochlorite <br /> Malic Acid Copper Sulfate Chlorinated Trisodium Phosphate <br /> Tartaric Acid Nylon Polymer Caustic/Wetting Agent <br /> Diammonium Phosphate Potassium Bitartrate <br /> Potassium Metabisulfite <br /> 9. Winery wastewater is currently discharged to the unlined ponds for evaporation and percolation. <br /> The approximate capacity of the deep pond is 12 million gallons. The pond is separated into four <br /> smaller ponds by interior berms. <br /> 10. Stillage is currently discharged to the shallow pond. The approximate capacity of shallow pond is <br /> 0.95 million gallons; the shallow pond area is separated into approximately 20 subareas by berms. <br /> 11. According to the Discharger, the ponds have never overflowed. Reportedly, the Mokelumne River <br /> has flooded the shallow pond area on two occasions. <br /> 12. Approximately every three years, the shallow pond has been disced and occasionally scraped to <br /> remove accumulated stillage solids. The deep ponds are disced on a yearly basis. This Order <br /> requires significant improvements in pond configurations. <br /> 13. The Discharger has proposed significant improvements to the wastewater system. All wastewater <br /> will be discharged to a lined, mechanically aerated, integrated wastewater treatment pond to be <br /> located in a portion of the deep pond area. The remainder of the pond area will be converted to a <br /> slow rate land treatment system. The land application area will be operated at agronomic rates. <br /> 14. Winery wastewater and stormwater are screened at floor drains prior to discharge to the deep <br /> ponds. Screenings are collected and disposed in vineyards or in the wastewater pond area. This <br /> Order requires changes in the solid waste disposal practices of the Discharger. <br />
