WASTE DISCHARGE REQUIREAS ORDER NO. 5-01-172 <br /> EAST-SIDE WINERY DBA OAK WE VINEYARDS 3 <br /> SAN JOAQUIN COUNTY <br /> 15. Pomace and other grape wastes (skins, seeds,pulp, and stems) from the primary fermentation <br /> process in the winery are sold commercially, are sent to vineyards (owned by cooperative <br /> members), or are composted in the area of the wastewater ponds. The secondary fermentation <br /> process produces lees consisting of yeasts and solids coagulated with bentonite and settled. After <br /> filtration, these wastes are hauled to the wastewater ponds area. The filtrate is returned to the body <br /> of the blend. <br /> 16. Stems are compacted and transported to the land next to the ponds. On some occasions the <br /> Discharger has contracted to have the filter cake picked up by a commercial firm to extract <br /> potassium bitartrate (cream of tartar). When commercial disposal is not available, the filter cake is <br /> disposed of with the stems in the pond area. This Older requires changes in solid waste disposal <br /> practices. <br /> 17. The winery is not expected to expand its operations in the future unless the economics of operating <br /> the distillery change. In that case, additional stillage will be generated. Discharges are anticipated <br /> to continue at approximately the current rate. Presently, flows are not metered; these waste <br /> discharge requirements include a provision for installation of meters to determine the wastewater <br /> flow. <br /> 18. As of June 2000, East-Side Winery has performed monthly monitoring of the effluent and the deep <br /> pond to characterize the wastewater effluent.
