The <br /> steam table is for keeping food hot after proper cooking/re-heating temperatures. <br /> Corrected on site: Meatballs re-heated in the microwave to 156F. <br /> CALCODE DESCRIPTION:Any potentially hazardous foods cooked, cooled and subsequently reheated for hot holding or serving shall be <br /> brought to a temperature of 165#F.
