Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures Major <br /> OBSERVATIONS:The chicken and tri tip in the display warmer was 120-131 F and the jalapeno poppers and hot links were <br /> 124 F,the display warmer air temp was 152 F. Per employee the food was placed in the warmer at 11 AM. Maintain <br /> potentially hazardous food items at 135 F or above at all times when hot holding. Replace unit or use time as the public <br /> health control and maintain records and do not exceed 4 hour max hold time. Corrected on site,food items remaining at 3 <br /> PM will be discarded. <br /> The fish/cheese display was 49 F. Manager stated that the unit was in the middle of defrost. Provide 41 F or below for cold <br /> holding. Correct immediately. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
