Environmental Health Department <br />Facility Name and Address: PODESTO STOCKTON LLC, 104 LINCONLN CENTER , STOCKTON 95207 <br />Food Program Official Inspection Report <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: The interior of the one door cake freezer near the bakery counter was observed with food debris. Clean and <br />sanitize interior of freezer within two days. <br />The wall behind the three compartment sink in the meat department is orange with black spots on it. Clean and sanitize wall <br />today. <br />The garbage cans near the produce prep sink were observed with heavy grime and build-up on the interior and exterior of the <br />cans. Clean garbage cans within one week. Maintain clean. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br />This is (Minor) Violation. <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: The cutting boards in the deli area on the sandwich prep coolers were observed with scratches and staining. <br />Ensure that cutting boards are cleaned and sanitized every four hours. <br />Two of the butcher block tables in the bakery were observed with duck tape on the top of them . Remove duck tape as it is not <br />a cleanable surface and properly repair or replace tables. Correct within one week. <br />Cabinets in the bakery/deli area are missing the laminate covering in some areas. Touch up areas with semi -gloss paint so <br />that they are non-absorbent within 30 days. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards. (114130, 114130.1, 114130.2, 114130.3, 114130.4, 114130.5, <br />114132, 114133, 114137, 114139, 114153, 114155, 114163, 114165, 114167, 114169, 114172, 114177, 114180, 114182) <br />This is (Minor) Violation. <br /> #36 Equipment/Utensils/Linens: Proper Storage / Use <br />OBSERVATIONS: Observed stacks of soiled single use aluminum loaf pans on the shelf in the deli dry storage room. <br />Discontinue saving these and re-using them unless they can be cleaned properly. Correct today. <br />Observed knives in the hand sink in the meat department. Use hand sink only for washing hands. Clean knives in the three <br />compartment sink. Correct today. <br />CALCODE DESCRIPTION: All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate <br />from food and food-contact surfaces. (114185.3 - 114185.4) Utensils and equipment shall be handled and stored so as to be <br />protected from contamination.
